Cruisers love to eat. And, the old saying “Necessity is the mother of invention” should be inscribed above every stove in every galley. Carol DeFelice’s Peach Crisp

(We met Carol and her husband, Jim, two years ago while cruising in Belize.  Carol is a wonder to all of us first mates because she has no refrigeration on their boat Windquest.  Yet, time and time again, she comes up with gourmet appetizers, meals and desserts.  If you ever get the chance to put your feet under table, take it.)

1. Preheat oven to 375.

2. Peel and slice 8 peaches into 8X8 baking dish or 9” pie pan.

3. Add ½ tsp. nutmeg, 1 Tb. Cornstarch, ¼ c of sugar and mix it with the fruit.

4. In another bowl, mix together a stick of butter, ¾ c. of brown sugar, a cup of flour until it looks like coarse meal.

5. Place topping on top of fruit.  Bake at 375 for 45 to 50 minutes.
