TOMATO TARRAGON SOUP WITH CRABMEAT

 

When you’re visiting Charleston, SC, you must stop in at one of our favorite places for a great lunch or dinner.  Five Loaves Café specializes in gourmet soups with wonderful salads and sandwiches as well.  There are several locations.  Our favorite happens to be downtown on the corner of Coming and Cannon Streets.  You can also visit their website at www.fiveloavescafe.com.

 

Here’s the recipe for Beth’s personal choice of soup.

 

1/4 lb. Butter
 
1 Yellow Onion diced small
 
1 Tbsp Chopped Garlic
 
51 ounces of tomato sauce
 
1/2 Can of Chicken Broth
 
1-1/4 Cups of Tomato Paste
 
1/2 Cups of Heavy Cream
 
1-1/2 Large Vine Ripe Tomatoes diced
 
1/4 Bunch chopped fresh Tarragon
 
Salt and Pepper
 
Lump Crabmeat
 
Saute onions and garlic in butter.  Add tomato
sauce and paste, chicken broth and cream.  Cook over
medium heat for 30 minutes.  Skim any foam that comes to
the top.  Add fresh tarragon and tomatoes and cut off
heat.  Season with salt and pepper to taste.

Garnish with crabmeat.
