Lucayan Chicken Salad

We enjoyed this salad for lunch at the cabana by the pool at the Lucayan Marina Village near Freeport, Grand Bahama.

Roasted chicken strips

Diced green pepper

Diced onion

Sliced grapes

Chopped apple

Orange slices

Chopped honeydew

Mix all ingredients and serve over a bed of chopped lettuce. Top with a dressing of ketchup, mayonnaise and black pepper.
