Fried Shrimp from Xcalak Caribe with Yamira

If you ever visit the community of Xcalak in Mexico on the Belize border, you must go to Yamira’s restaurant Xcalak Caribe and order the fried shrimp.  It’s a most interesting presentation and her salsa for dipping is very unique.

 

 

4 – 6 eggs

1 beer

Flour

3 spoons of either coriander or parsley

Two cloves garlic, minced

2 spoons chopped leek

2 spoons chopped celery

Shrimp seasoning

1 cup chopped shrimp

 

Combine the eggs and beer and enough flour to make a batter the consistency of cornbread mix.  Add remaining ingredients and stir.  Fry the mixture by big spoonfuls, like fritters until shrimp is cooked.  Serve with salsa.

 

Salsa -  Mix tamarind, chili chipotle and a little sugar together with water.
