Emmy Marte’s Chicken Dijon

(We met Emmy and her husband, Dave, on Ambergris Cay in Belize.  Natives of Canada, they are very active in mission work which is what brought them to Belize.)

(Halve this recipe for a smaller batch)

2 cups plain yogurt. (I use fat free) Chicken dijon plate 
6 tab. lemon juice
3 tab Dijon mustard
3 cloves garlic pressed
1 1/2Teas. Poultry seasoning
Pepper and salt to taste
20 boneless chicken thighs

Pound boneless chicken thighs flat. Combine ingredients and pour over chicken in a large bowl or glass pan to marinate, covered overnight in refrigerator.

2 ½ cups fine bread crumbs
2 cup grated Parmesan cheese
1 1/2Teas. Salt
3/4 tsp. pepper
1 tsp. cayenne

Combine ingredients in a large 13x9 or bigger glass pan. Take chicken from marinade and put in breadcrumb mixture coating both sides. Place on foil lined baking pans.
Bake at 375 for 40 min. Until golden brown.

Dipping sauce:
1-cup mayonnaise
3 Tab Dijon mustard
Mix well and serve with chicken
