Chicken Up Jinks
One small fryer chicken, cut up
11.5 oz. can of V-8 Juice
8 oz. can tomato sauce (roasted garlic flavor, if possible)
1 cube chicken bouillon
2 garlic cloves
½ stick butter
One onion
Oregano
Paprika, salt, pepper
Season the chicken with salt, pepper and paprika. Melt butter in large frying pan. Saute the garlic and onion. Then, brown the chicken pieces in butter mixture and remove to the side. Add the V-8 Juice, tomato sauce, and bouillon cube to sauté mix. Sprinkle liberally with oregano. Add salt and pepper to taste. Stir and heat. Return chicken to tomato mixture. Cover and simmer until chicken is done. (Turn chicken pieces at least once while cooking.)
